Easy to make and fabulously filling, this thick soup is delicious on its own or works great as a base for a hearty soup. It’s wonderful with cauliflower, peppers, spinach, and chicken. Or get creative and add a protein and mix of veggies that you love. Whether you add your own ingredients or make just make it the quick-and-easy way, we’re sure you’ll enjoy the rich, curry flavors.
Combine the contents of one packet and 6 oz of HOT water in a microwave-safe bowl. Stir thoroughly. Microwave on HIGH (100%) for 3 minutes; stir. Continue cooking on HIGH for 2 to 4 minutes or until thick consistency. (Microwave ovens vary; adjust time as needed.) Cooking it this long allows for the contents to rehydrate and not be chewy. This length can be skipped if the soup is soaked in water for 5 minutes or more prior to cooking.
Combine the contents of one packet and 6 oz of HOT water in a saucepan. Stir thoroughly. Bring to a boil over medium heat. Reduce heat and simmer uncovered 6 to 8 minutes or until thickened, stirring frequently.
